Stacation + Weekend Menu

Kickin off summer!  Woot woot!

Finials have been taken. Grades are recorded. Graduations are over. Last day’s of school are completed around here. We are free for the summer! This weekend marks the beginning of summer for most people.  I’m so glad we don’t like to camp on Memorial Day Weekend. It’s staycation around here.

The weather is a little cool & overcast. Perfect for catching up on some overdue rest.  I downloaded Whole Living magazine on my iPad for the weekend. We are planning some good wholesome food.  I am hoping to feed that boy mega protein, calcium, and antioxidants, but no doubt we’ll have our fair share of sugar.  A trip to the local Owyhee Ice Cream shop and a good round of Phase 10 is on the agenda.

One thing I am learning about the abundant life is it takes abundant rest. Great ideas don’t come from hurried thoughts. Deep healing doesn’t take place in short breaths. Joy requires fuel and that is nothing short of constant rejuvenation.

Lemonade Chicken Kebabs

1 pound chicken breast cut in 1″ cubes

1 can frozen lemonade, thawed

3 T soy sauce

3 T olive oil

1 Ripe but firm Mango cut in 1 1/2″ chunks

Honeydew melon cut in 1 1/2″ chunks

Combine lemonade, soy sauce, and olive oil. Reserve 1/4 cup. Marinate chicken for 2 hrs in refrigerator. Place mango & melon in reserved sauce.

Preheat grill to medium high.  Thread drained chicken cubes onto skewers. On separate skewers thread fruit chunks, alternating fruits.  Grill meat for 10-12 minutes or until center is 165*F.  Add fruit kebabs to grill after turning turkey kebabs.


Grilled Potato Planks

11/2 lb unpeeled potatoes cut into 1/2″ thick slices

3 T Olive oil

2 teaspoons Fresh Rosemary, finely chopped

1 Garlic clove, minced

1/2 teaspoon Salt

1/4 teaspoon Pepper

Preheat grill to medium high. Combine oil & seasonings in a dish. Ad potato slices, turning until well coated.

Grill for 8 or so minutes. Turn and continue grilling 10 more minutes until cooked.


Lemonade Milk Shake

2 cups milk

1pint vanilla yogurt

Frozen lemonade concentrate, thawed

1 pint lemon sorbet, softened

In a blend combine first 3 ingredients.  Process until smooth. Pour into tall glasses & top with a large scoop of sorbet.
